Each fee charges its amount through consecutive price periods. It's the Prices tab of the fee editor.
How periods work
Each price has a name (e.g. "Early bird"), an amount and a validity window with start and end date and time
Periods cannot overlap or leave gaps: the platform validates the sequence is continuous
You can align the first and last period with the event's registration opening and closing in one click
When the period changes, the price goes up on its own: nothing to touch on the changeover day.

Show price dates: tell participants when the price changes (a good early-bird incentive)
Things to keep in mind
Each registrant pays the price in force at the moment they register
Discount codes apply on the current price
Form fields with extra cost add to the fee's price
If you change the event's registration dates, check the periods still cover the whole window
